Falling Film Vacuum Evaporators

Design

Vacuum Evaporator used for the thermal treatment of clear juice is a falling film vacuum evaporator. The design of this evaporator consists of a vertical shell and tube heat exchanger along with a centrifugal separator which is connected laterally or concentrically with the heat exchanger.

Working 

Concentrating the fruit pulp is the most necessary part in fruit processing. For concentrating the pulp, it is supplied to the falling film vacuum evaporator through the top of the heating tubes. The applied fruit pulp is distributed along the heating tubes in such a way that the pulp is flowing down through the heat tubes as a thin film. Partial evaporation of the pulp is taking place as the result of external heat applied to the heat tubes.  Initially the liquid is flowing downwards as the result of gravity. There is a gradual increase in the downward flow of the liquid because of the flow of vapour produced is also flowing in downward direction. The vapours and the thin film of fruit pulp are needed to be separated. The residual thin film of the fruit pulp is deposited to the lower part of Calandria and the vapours in the downstream centrifugal droplet separator.
